Just like to let you know that our Etna 100 oven arrived safely in Cairns yesterday and I collected it today. A quick rendezvous with the local mini crane operator and I am delighted to say it's now in place atop the custom base unit that's taken me forever to build!
We are delighted with our purchase (even before we have had a chance to fire it up).

I used the rotisserie for the first time in my Etna oven to cook a couple of chickens and a tray of roasties, turned out beautiful. Made a bbq sauce, honey and soy glaze that tasted great. Also, tried a pork joint this week, wow what flavour, 2.6 kilo joint took 2 hours, crispy crackling, sweet juicy meat.

It is good to see that customer service still exists with some businesses.
Thankyou, much appreciated and just a couple of notes you may be interested in.
1. My mistake but I got the floor temp up to 490C, does not make a good pizza, the base cooks but topping does not melt.
2. I get lazy and make dough in a breadmaker as it is easier to get to than our Kenwood Chef, it mixes well and has a heating function that proofs the dough, I have found that it is too warm and the dough rises far too quickly and collapses on itself, the result is a sticky runny mess that is unworkable, I still use the breadmaker but as soon as the mixing has stopped I transfer to an oiled bowl and allow normal proofing which results in a nice smooth elastic dough, I aim for about 65% hydration and do not use oil, 50/50 plain and 00 flour works for me.
We are extremely pleased with the oven and wish we had done this a long time ago, thanks again for your assistance and prompt service.

Hi Christi and Giuseppe, just a question regarding the touch up cork mix. it has gone hard and rubbery. What can we do to soften it up so we can touch up a little crack? Or do we need to buy some fresh mix?
We have it since 4 years now but we are still in love with our Etna oven ( and so are all our friends!)

I must say , the oven has been a draw card in the garden with everyone wanting to have a go on the peel . It certainly has been fun and laughs when sometimes the pizza sticks to the peel and ingredients come flying
off onto the oven floor. More flour, more flour we chant. I think its only a matter of time before my brothers invest in their own oven.

We did a roast of lamb in our gourmet oven yesterday, it turned out pretty well for a first attempt. We also did a lasagne in it before and that was great too. This weekend I’m going to do a whole duck in it with asian spices as they lend themselves very well to duck. I will post it on your facebook page.

It has been a process getting pizza oven setup in between our work days (because of the way we wanted it built in) but it’s totally worth the planning. Really happy with the end result. We are loving our new pizza oven Pietra. It’s stunning !!! It took some time to get in in place but it is so worth the effort. It now stands proud on its sandstone base.
We’ve had great success with pizzas and sour dough bread baking ( both on the floor and in a Dutch oven inside the oven to see the difference). We are trying to use it every weekend, I don’t want it to just look beautiful, we want to use it! PS we’ve had loads of compliments on our oven, thanks to you !! Hi there. We are just loving having our Etna. We have had so many pizza nights with our friends. Roasts, stews, casseroles and breads galore also. Even an apple crumble. There’s one small problem though. I’m finding it hard to find photos for you. I take many ‘prep’ photos and even ‘cooking’ photos but no ‘end result’ photos because the meals are eaten straight away with hardly any left overs!!!! I did manage to upload a beef stew video to your facebook page. I will endeavor to take some pictures of pizzas cooked this weekend. Now if that’s the worst problem to be had, there’s no problem at all is there.

Just wanted to say we are really happy with our big Etna oven. We made a few mistakes at first but we are getting better and keep trying new things. We cooked a couple of lamb shanks last weekend, that came out so nice! We can’t speak well enough, we really like the oven and all the great service, and thank you for the big pot. It is lovely.

Thought I give you an update.
We have used the oven so much and absolutely love it. I made the most amazing pork roast, the best crackling I have ever made!
We can't wait till we can use the rotisserie we just received. All depends on these fires, we have one right near us at the moment so are on a total fire ban. The rotisserie might have to wait until the new year.

Love your work and I love the oven. Very little cracking after about 10 days of increasing fires so that’s good. I will send you photos of the oven outside my super new eco friendly off grid small house on the hill. I just need to get the wood storage unit under the stove finished and painted and we are ready to go. FYI I got the bobcat operator profiling my garden to lift it into place. Effortless.

I tell you what.. that Pizza oven got a good workout during the lockdown. We did pizza at least once every few days. I was using it so much that I decided to put the cover away as the oven was not cooling enough before the next firing! We are enjoying cooking in our pizza oven so much. The pizzas are coming out just amazing. I have noticed that the next morning the oven is still around 150C even if I don’t add a log at the end of the pizza baking session. So next time I will do slow cooking or scones for breakfast the next morning in the retained heat. We’re having a lot of fun with our Chef!

I have made quite a lot of pizzas since I've had it and a couple of casseroles I even made a steamed pudding in it and it came out great. In my dough mixture I use some greek yoghurt and a little olive oil and I get a nice soft crispy pizza base.
The oven works great and I use it quite a lot when I have some free time. Over summer I will use it a lot more. I've been using Pohutukawa and Oak for the wood.

We are really enjoying our Fiamma pizza oven. Managed to get the outdoor kitchen finished a few months ago and have been cooking in the oven whenever I get the chance.
Today we had pizza’s for lunch, then I put in a bread loaf to cook, and finally left a pork leg to cook which we had for dinner (it just pulled apart). Excellent.

The laser thermometer is excellent to check the right temperature of the stone for cooking pizzas. No longer a problem with either burned or underdone crust. Thank you for including it!

The only issue we have is not having enough time to use to oven. We love it. Thanks so much. We have only cooked roasts and vegetables in it so far but the results have been fantastic and our guests are amazed by the food and there has been no left overs. I am amazed at how much can fit in the oven and how little wood you need to run it once its up to temperature. We are burning Manuka and have found that Matai is also as good.
Hopefully the weather will give us a break this Sunday so we can have our neighbours over for Pizza Sunday, could be the start of something good, I'm looking forward to trying some of the recipes you sent us, thank you both very much for keeping in touch and take care.

We are absolutely loving our Piccolo oven, have only cooked pizzas so far. Our dessert pizza was amazing! Nutella rocky road chocolate, strawberries and caramel sauce, once cooked topped with icecream. Delicious!

I received the trolley and it is perfect for my balcony. I am luvin' my Piccolo oven. I did a Tomahawk steak and put it on a cast iron grill pan to crisp it up. Wonderful.

The Piccolo is simply put, incredible! It heats up fast, and retains heat for a long time. While the inside of the oven maybe at 650°f (the hottest I've needed to get it thus far) the outside is cool to the touch. I baked a pizza today in less than 2 minutes, cooked to perfection. I highly recommend the Piccolo for any backyard Pizza enthusiast.
